Ingredients
  1. 1 sheet frozen puff pastry (1/2 of a 17.3 oz. package)
  2. 1/3 pound wedge Brie cheese
  3. 2 small Summeripe® peaches or nectarines or 2 large plums (or any mixture), diced
  4. 2-3 thin strips prosciutto, diced
  5. 1 tablespoon chopped fresh thyme
Instructions
  1. Preheat oven to 400°F.
  2. Thaw pastry according to package directions and roll into a 14-inch square on a lightly floured board.
  3. Cut into 36 equal squares. Press each into the bottom of a mini-muffin cup.
  4. Trim away outer edge (rounded edge) of Brie and cut into small pieces (1-inch cubes).
  5. Place equal amounts in the bottom of pastry lined cups.
  6. Place several pieces of fruit in each cup on top of cheese; top with prosciutto.
  7. Bake for 12 to 15 minutes or until puffed and golden brown.
  8. Remove from oven and sprinkle with chopped thyme. Serve warm.

Ingredients
  1. 2 large Summeripe® nectarines
  2. 20 thin strips prosciutto (about 4 oz.)
  3. 1/2 cup crumbled Gorgonzola cheese
Instructions
  1. Preheat broiler and line a baking sheet with foil. Cut each nectarine into 10 slices and wrap each with a prosciutto strip.
  2. Place on prepared baking sheet and broil for 2 to 3 minutes on each side or until prosciutto is crispy.
  3. While warm, sprinkle with cheese. Serve with toothpicks.
